Geppetto's Grilled Pizzeria · Providence, RI
The recipe from the waterfront. Simple, quick, no rise needed.
Place all dry ingredients in a bowl and mix together.
Add the wet ingredients to the dry and mix. The dough should come together into a ball. If it's too dry, add water one tablespoon at a time. If it's more like a batter, add flour one tablespoon at a time.
Remove the dough from the bowl and place it on a pizza tray. Portion into 4 oz pieces — each will produce one 8" grilled pizza.
Roll each portion into a ball and lightly coat with olive oil. The dough does not need to rise and is ready to use immediately.
Dough can be refrigerated for 2–3 days or frozen for longer storage. Bring to room temperature before rolling out.
