A recipe from the desert Southwest, passed down with love.
Mix the flour and salt together. Work in the margarine until the mixture resembles coarse crumbs, then add ice cold water one teaspoon at a time until the dough just comes together. Press into a 9" pie dish.
Combine all custard ingredients — sugar, corn syrup, margarine, lightly beaten eggs, vanilla, and salt — in a large bowl and mix well. Pour into the unbaked crust.
Arrange the pecans on top of the custard filling. Bake at 350°F for 45–50 minutes, until the filling is set with just a slight wobble in the very centre. Cool completely before slicing.
